I made this salad on a whim today, and I thought it turned out really well.
1/2 cup cooked quinoa. I use Tru Roots brand
1 can of artichokes
1/8 of tsp of cayenne pepper
1TBS of Annie’s Greek Goddess dressing
1 carrot chopped
1 bunch of green onions chopped
pepper to taste
Mix all ingredients together well and serve on a bed of baby arugula.
* I use organic ingredients whenever possible.
